Carnaroli rice with saffron, mussels, cuttlefish ink and confit cherry tomatoes.
Tonnarelli pasta with pasteurised egg yolk cream, Pecorino Romano, crispy black pork guanciale and flambéed black pepper.
Pappardelle with black pork ragù, wild fennel and juniper berries.
Tomato sauce, fried aubergines, basil and salted ricotta.
MAIN COURSES – SECOND DISHES
Tuna sashimi marinated in ponzu and mustard, herb-smoked and sesame-crusted, with pink grapefruit, rosemary mashed potatoes and caramelised Tropea onion.
Blue fish fillet cooked to perfection, with caramelised Tropea onion, Aeolian capers and Taggiasca olives in a Sicilian citrus-infused oil.
Crispy-skinned catch of the day, served with grilled aubergine cream, black olive crumble and sautéed wild herbs.
Grilled swordfish steak with lemon and parsley sauce.
Beef tournedos on turmeric potato fondue, green pepper jus, sautéed mushrooms and crunchy almonds.
Slow-cooked black pork rack, grilled and served with herb jus, rosemary potato tart, spinach and confit tomatoes.
